As you have children travelling with you I'd go for a resort for my first trip, preferably somewhere that has kids facilities and maybe even a kids club. Some outings recommended for kids are the Bali Safari and Marine Park, Waterbom Park, Tree Top Walking, Bali Zoo, Taro Elephant park.....You have a bit of time, get the kids involved and make a collage of the things they'd think they'd like to do whilst over there, book trips over there, much cheaper.
As for drivers definetely book one for your transfers, lots of recommendations on here, book one for your transfers and then see if you can get a raport going with him on the trip from the airport to your resort. Then you'll know whether to use him or not, he'll give you a business card for contact anyway. Your hotel will have a base of transport drivers readily available for tours and shopping trips. Just make sure you get the price upfront first.
